The Clos Saint Jean

The domain Michel MOREY-COFFINET was founded thanks to the twinning of the vineyards of the domain Marc MOREY and of the domain Fernand COFFINET which are both, since several generations, renowned domains of Chassagne-Montrachet's village.

The surface of the exploitation is 9 hectares; the Chardonnay variety is planted on 5 ha and produces great white wines. The rest of the surface is planted in  Pinot Noir variety and produces red wines, certainly less known, but very appreciated in the world by their flavor of red fruits and their flexibility.
The average production of the Domain is 55 000 bottles a year distributed on 14 different naming:

Cellars and domestic house are situated in the top of Chassagne-Montrachet's village. Leaned in Closed St Jean and built on the cliff limestone, house dates from 1820 and needed numerous works of renovation. Under the house and under the wine storehouses, are five very beautiful cellars in cut stones. The most ancient of these cellars (in drawing on the label) dates from the 16-th century and welcomes around its central pillar, the amateurs of wine and beautiful stones.

The maturing of the wines of the domain is made in the other cellars which are ideal for the rest and the ageing : important humidity and temperature of 12°C constant all year long.

The wine making is completely traditional, with a conservation of wines in barrels, among which 1/3 in new barrels, a regular bâtonnage(stirring of the lees in a barrel) of white wines and a rather sweet sticking - filtering to preserve the wines all their subtleties.

The bottling is made in the domain, about 12 months after the grape harvests. It concerns 90 % of the total harvest.
   

   "Techniques used to vinify my wines, since the grape harvests until the bottling, are the result of 20 years of personal experience. This experience follows upon the learning of the profession and its secrets in the cellars of my father Marc and my father-in-law Fernand. The guest of the site will understand easily that all the experience acquired during several dozens years by wine making can not be revealed here. My sons will be the only ones to know the precise and personal techniques of the wine makings of the Domain Michel MOREY-COFFINET."

The amateurs of Vintage wines of Burgundy are always welcome in the cellars of the domain. It is however preferable to make an appointment for a surer visit.
